Indulge in a spring fling evening at Rivers Dining Room on March 15 and 16, and enjoy fine cuisine paired with beer and cider.
This gourmet four-course meal is prepared by UFV’s Culinary Arts cooks-in-training with beer and cider pairings provided by Whatcom Wine and Spirits.
Only $39.95 per person (including beer and cider pairings with each course. Tax not included.) A great price for a four-course meal.

Appetizers
Garlic Shrimp
Large cold water shrimp are sautéed in olive oil with garlic and shallots and finished with white wine. Served on a bed of rice noodles.
Salad
Spinach and Berries
Tender baby spinach salad with fresh mixed berries on top. Served with our creamy honey ginger dressing.
Entrees

Roasted Lemon Rosemary Chicken
Chicken breast supremes (with drumette attached) are marinated in a rosemary, lemon, and white wine marinade, then “stabbed” with rosemary, massaged with olive oil, and roasted to perfection.
Snapper Florentine en Papillote
Wild caught red snapper is topped with spinach and fennel and baked in a parchment envelope for flavourful results.
Bacon-wrapped Pork Tenderloin
Pork tenderloin is stuffed with dried fruits and wrapped with bacon, then baked until tender, juicy, and delicious. Served with brandy apple sauce.
Red Wine Ratatouille
Assorted vegetables are stewed in red wine tomato sauce and served in grilled portabella mushroom “bowl”. Topped with goat cheese for a perfect accent.
Dessert

Angel Food
A favorite classic dessert, light airy angel food cake, topped with sliced fresh strawberries and Chantilly cream.
Chocolate Mousse
Rich dark chocolate mousse is served topped with Chantilly cream. Freshly baked lady fingers are added for dipping.
Crème Caramel
This classic vanilla custard is baked with caramelized sugar to make its own divine sauce. Served with strawberries and fresh Chantilly cream.
